Soft Coconut Flour Chocolate Chip Cookies

Ingredients (9–12 cookies)

  • ⅓ cup coconut flour

  • 2 eggs

  • 3 tbsp melted coconut oil

  • ¼ cup coconut sugar or monk fruit

  • ¼ cup dark chocolate chips (dairy-free)

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions

  1. Mix eggs, coconut oil, and vanilla.

  2. Add coconut flour, sweetener, and salt.

  3. Fold in chocolate chips.

  4. Shape and flatten slightly.

  5. Bake at 350°F (180°C) for 10–12 minutes.
